Hey guys! I hope that you have been able to recover from the Thanksgiving coma and the shopping exhaustion and are ready to kick start your 2018 with a pep in your step and an energy that can only come from within.

Today I took 15 minutes to make the most delicious dish and thought I would share it with you to inspire you to Eat Healthy, Think Healthy and Live Healthy!

Okonomiyaki (お好み焼き o-konomi-yaki)) is a Japanese savory pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "grill". Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan, but is widely available throughout the country. Toppings and batters tend to vary according to region. In Tokyo, there is liquid okonomiyaki called 'monjayaki.'

So its super easy, cheap and healthy:

pre heat oven to convection bake 420

1/2 cup of water

2 eggs

1.5 tablespoon Sesame Oil

1.5 tablespoon soy sauce

mix together thoroughly

1 cup of flour (try whole wheat if you can)

Add flour slowly mixing in 1/4 at a time until smooth

4 cups of shredded cabage

1/2 cup of onion

1/2 cup of shredded carrots

Add veggies to dough and mix well

Grease cookie sheet with sesame oil

Spread cakes onto cookie sheet, about 1/5 inch in thickness and 6 inches around... or whatever desired...

Sprinkle with sesame seeds

If desired add a little egg beaten on top to seal the pancake

Ways to make it a complete meal: add fried egg, grilled shrimp, pulled pork on top.

Finish with sriracha sauce
